My Favorite Dessert Recipe(s)

KellyShowUs Kelly over at Kelly’s Korner is continuing her Show Us Your Life weekly series, and I just couldn’t resist today’s topic, Show Us Your Favorite Dessert.  The problem is, I can’t pick just one favorite dessert!  I have one binder of meal recipes and one whole binder full of dessert recipes:

Anyway…..I decided to list a few dessert recipes here for you to enjoy since I couldn’t pick just one (please don’t send angry emails blaming me for all the extra pounds you gain eating these)!!  Sorry I don’t have photos of these desserts, but it’s probably for the best since y’all would probably be trying to eat your computer monitors!

First up is a very rich dessert that I actually haven’t made in quite some time, but really need to! If you love peanut butter & chocolate, than this recipe is for you. This recipe is quite labor intensive, but oh so worth it!  It came from a local restaurant.
Ralph & Kacoo’s Satin Pie
1/3 cup butter
1 1/2 cup graham cracker crumbs
1/4 cup firmly packed brown sugar
1 cup creamy peanut butter
2 cups sugar
1 lb. softened cream cheese
2 tsp. vanilla
1 1/2 cup whipping cream
3 Hershey bars
3 tbsp. milk
Melt butter, mix with graham cracker crumbs and brown sugar.  Pour into a 9 inch spring form pan and press onto bottom and 1/3 way up the sides. Set aside.
Beat peanut butter, sugar, cream cheese and vanilla with electic mixer until smooth and creamy.  Set aside.
In a separate bowl, beat whipping cream until soft peaks form.  Fold by hand into peanut butter mixture.  Spoon into crust and refrigerate for 6 hours.
Melt Hershey bars in microwave 30 seconds.  Stir until all lumps disappear.  Add milk and mix until smooth.  Heat in microwave 40 seconds.  Pour over pie and tilt pie to allow mixture to spread evenly.  Refrigerate until chocolate chills.

This next recipe is a great summer dessert from Southern Living magazine, especially if you love coconut. It is fabulous!! This recipe makes two pies (I always use the premade refrigerated pie crusts).
Caramel-Coconut Pie
1/4 cup butter or margarine
1 (7 ounce) package flaked coconut
1/2 cup chopped pecans
1 (8 ounce) package cream cheese, softened
1 (14 ounce) can sweetened condensed milk
1 (16 ounce) container Cool Whip, thawed
2 baked 9” pie shells
1 (12 ounce) jar caramel ice cream topping
Melt butter in a large skillet.  Add coconut and 1/2 cup pecans; cook until golden brown, stirring frequently.  Set aside & let cool.
Combine cream cheese and sweetened condensed milk; beat at medium speed of an electric mixer until smooth. Fold in Cool Whip.
Layer 1/4 of cream cheese mixture in each pie shell.  Drizzle 1/4 of caramel topping over each pie.  Sprinkle 1/4 coconut mixture evenly over pie.
Repeat layers with remaining cream cheese mixture, caramel topping, and coconut mixture.  Cover and freeze pies at least 8 hours.
Let frozen pies stand at room temperature 5 minutes before slicing. Garnish with pecan halves if desired.

And finally, here’s a recipe that will cure just about any chocolate/sugar craving that you may encounter.  I always have these ingredients on hand so it’s easy for me to whip this up when the mood strikes.  I got this out of The Sweet Potato Queen’s Book of Love years ago, and have spent many happy (and a few sad) nights on the couch with it since.  Guard this stuff with your life, you will not want to share it, you will want to eat the whole batch by yourself. In one sitting. I give you:
Chocolate Stuff
2 eggs
1 cup of sugar
1/2 cup flour
1 stick of butter
2 tablespoon cocoa
1 teaspoon vanilla
1 cup chopped pecans (optional)

Beat two eggs with a cup of sugar and a half cup of flour. Add 1/4 teaspoon of salt.
In the microwave, melt together one stick of butter with two heaping tablespoons of cocoa.
Stir the egg and cocoa-butter mixtures together and add 1 full teaspoon of vanilla. Add pecans if you want.
Put in a greased loaf pan then set loaf pan in a bigger pan of water and cook at 300 degrees for 30 to 40 minutes.
Don’t worry if the bottom is gooey, that is the way it is supposed to be! The top is brownie like with a crisp crust and the bottom is all warm and gooey.  Ok, now I have to go make some!
